Oreo Blondies

Ingredients
- 225 g unsalted butter, melted
- 200 g brown sugar (light or dark, for richer flavor)
- 2 large eggs
- 2 tsp vanilla extract
- 180 g all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 50 g white chocolate chips
- 50 g dark chocolate chips
- 12-15 Oreo cookies (roughly chopped)

Preheat the oven to 175°C (350°F). Line your 10-inch square pan with parchment paper, leaving an overhang for easy removal.

In a large bowl, whisk together the melted butter and brown sugar until smooth. Add the eggs and vanilla, whisking until fully incorporated.

Add the flour, baking powder, and salt. Fold gently with a spatula until just combined. Avoid overmixing.

Fold in the chopped Oreos, white chocolate chips and dark chocolate chips save some Oreos for topping.

Pour the batter into the prepared pan and smooth the top. Sprinkle remaining Oreos on top. Bake 25-30 minutes, or until the edges are golden and a toothpick inserted in the center comes out mostly clean (a few moist crumbs are okay-blondies are meant to be fudgy!).

Let cool completely in the pan on a wire rack, then lift out using the parchment overhang. Cut into squares and enjoy!
