Mango Sticky Rice
a sweet mango served with sticky rice and coconut sauce.
Ingredients
For the sticky rice:
- 200 g glutinous rice
- water (soaking)
For the coconut sauce:
- 300 ml coconut milk
- 80 g sugar
- 1/2 tsp salt
- 1 tsp cornstarch (for)
For serving:
- 1 ripe mango (big)
- sesame seeds (optional)
- toasted mung beans (optional)

Prepare the Sticky Rice

Rinse the glutinous rice 2-3 times.

Soak for 1 hour (or overnight).

Steam for 20-25 minutes until tender and sticky.

Make the Coconut Sauce

In a small pot, combine the coconut milk, sugar, and salt.

Heat gently until the sugar dissolves - do not boil.

Pour half of this warm, thin sauce over the hot sticky rice.

Mix gently and let the rice absorb it for 10-15 minutes.

Make the Topping Sauce

In a small bowl, mix 1 tsp cornstarch + 2 tsp water to make a slurry.

Add the slurry to the remaining half of the of the coconut sauce in the pot.

Heat on low until slightly thickened and glossy.

Serve

Plate the sticky rice with sliced mango.

Drizzle the thick coconut sauce on top.

Garnish with sesame seeds or toasted mung beans.
