Biscoff Cookies
delicious biscoff cookies with a frozen biscoff center and white chocolate chips.

Ingredients
for cookie dough
- 120 g melted butter
- 120 g brown sugar
- 60 g white sugar
- 1 large egg
- 80 g crushed biscoff biscuits
- 1 tsp vanilla extract
- 260 g all-purpose flour
- 1 tsp cornstarch
- 80 g biscoff spread
- ½ tsp baking soda
- ¼ tsp salt
- 120 g white chocolate chips
filling
- Biscoff spread (freeze in 10 small balls)
Directions

scoop 10 tsp of biscoff spread onto baking paper and freeze for at least 2 hours.

mix melted butter with sugars until creamy, then add egg, vanilla and Biscoff spread.

combine flour, baking soda, cornstarch and salt, fold into the mixture.

add white chocolate chips and crushed Biscoff cookies.

flatten 2 tbsp of dough, place a frozen Biscoff center inside, and seal into a ball.

chill dough balls for 1-2 hours (or overnight). bake at 180 °c / 350 °f for 12 minutes until edges are golden and centers soft.

right after baking, use a cookie cutter to shape them perfectly and top with the reserved chips.
