Oreo Banana Bread
banana bread with chopped oreos and a cream cheese icing.
Ingredients
Ingredients
- 4 ripe bananas (about 450-500 g mashed)
- 120 g sugar
- 100 g oil or melted butter
- 2 eggs
- 1 tsp vanilla
- 250 g all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 100 g Oreos (roughly chopped, don’t crush too fine)
Cream cheese icing
- 90 g powdered sugar
- 28 g unsalted butter (melted, but cooled)
- 57 g cream cheese
Directions
- 1
Preheat the oven to 175°C. Line a loaf pan with parchment paper or grease it.
- 2
Mash the bananas until mostly smooth.
- 3
In a large bowl, whisk together sugar, eggs, melted butter (or oil), and vanilla extract until smooth.
- 4
Add the mashed bananas to the bowl and mix until combined.
- 5
Add the flour, baking soda, and salt directly to the wet mixture and stir until just combined—be careful not to overmix.
- 6
Gently fold in the chopped Oreos.
- 7
Pour the batter into the prepared loaf pan and spread it evenly. Press a few Oreo pieces on top for decoration.
- 8
Bake for 55–65 minutes, or until a skewer inserted in the center comes out clean (a few moist crumbs are fine). Start checking at 50 minutes to avoid overbaking.
- 9
Let the loaf cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely before slicing
- 10
Cream cheese icing
- 11
Whisk the cream cheese first until smooth.
- 12
Slowly whisk in the cooled melted butter.
- 13
Add powdered sugar and mix until glossy.
