Orange Loaf Cake

Ingredients
Cake
- 190 g all-purpose flour
- 1 ½ tsp baking powder
- 1/4 tsp salt
- 100 g granulated sugar
- 1 orange zest
- 2 large eggs (room temperature) (room temperature)
- 60 g melted unsalted butter
- 60 ml sunflower oil
- 60 ml fresh orange juice
- 40 g yogurt or sour cream
- 1 tsp vanilla extract (optional)

1.Preheat oven to 180°C (350°F). Line a loaf pan (about 9x5 inch) with parchment paper or grease it

2.In a bowl, rub the orange zest into the sugar with your fingertips until fragrant.

3.Add the eggs, melted butter, oil, yogurt, orange juice, and vanilla extract (if using). Whisk until smooth and fully combined.

4.Add the flour, baking powder, and salt directly into the same bowl. Gently fold everything together until just combined. Do not overmix.

5.Pour into the prepared loaf pan and bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean.

6.Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

7.Once fully cooled, spread the cream cheese frosting on top and decorate as you like (orange zest, slices, etc.).
Notes
For the filling: Add all the ingredients into a mixing bowl and whisk together using a hand mixer or stand mixer. Whip until the mixture becomes smooth, thick, and fluffy about 2–3 minutes. Be careful not to overwhip.
