Lemon Blueberry Cobbler

spring officially starts when lemon meets blueberry.

Ingredients

blueberry filling

  • 500 g blueberries (fresh or frozen)
  • 120 g sugar
  • 15 g cornstarch
  • 1 lemon zest
  • 40 g lemon juice
  • 1 g salt

biscuit topping

  • 200 g flour
  • 90 g sugar
  • 7 g baking powder
  • 2 g salt
  • lemon zest
  • 80 g cold unsalted butter (cold)
  • 170 g heavy cream

Directions

    Preheat the oven to 180°C and grease a baking dish

    In a bowl mix blueberries, sugar, cornstarch, lemon zest, lemon juice, and salt.

    Spread into a greased baking dish (about 20–23 cm).

    Mix flour, sugar, baking powder, salt, lemon zest. Rub in cold butter until crumbly. Pour in heavy cream and mix just until combined. It should be thick and scoopable, not smooth.

    Drop spoonfuls over the blueberries. Do not spread flat.

    Brush top lightly with cream or egg (optional). Sprinkle 20 g sugar on top for crunch.

    Bake at 180°C for 35–40 minutes until golden on top and bubbling underneath.
