Fudgy Brown Butter Brownies

fudgy brown butter brownies.

Cook
60 min

Ingredients

Ingredients

  • 170 g unsalted butter
  • 200 g dark chocolate (60-70% cocoa), chopped
  • 125 g granulated sugar
  • 124 g brown sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 120 g plain flour
  • 30 g cocoa powder
  • 3 g salt
  • 100 g chocolate chips

Optional

  • 100 g chopped walnuts or pecans

Directions

  1. 1

Preheat your oven to 175C. Line a 10-inch square pan square baking pan with parchment paper.

  2. 2

Brown the butter: Melt butter in a saucepan over medium heat. Stir frequently until it foams, smells nutty, and turns golden brown. Once ready, take it off the heat and immediately add the chopped chocolate to it, mixing until it’s fully melted. Set aside.

  3. 3

Mix wet ingredients: In a large bowl, using an electric hand mixer, mix together the sugars and eggs until very pale and very fluffy. This will take 2-3 minutes. Next, pour the melted chocolate-brown butter mixture into the fluffy eggs and whisk until combined.

  4. 4

Fold in dry ingredients: Sift in the flour, cocoa powder and salt into the wet ingredients, and gently fold until just combined. Be careful not to overmix, because that can result in a cakey texture rather than fudgy. Lastly fold in the chocolate chips.

  5. 5

Bake: Pour the batter into the prepared baking pan and spread it out evenly. Bake in the preheated oven for 30 minutes; the fudgy brownie should be slightly gooey in the center.

  6. 6

Cool: Cool completely, then cut into squares. Optional: sprinkle flaky salt for contrast.
