Blueberry Lemon Bundt Cake
Moist lemon blueberry Bundt cake topped with the dreamiest cream cheese glaze.

- 300 g all-purpose flour
- 10 g baking powder
- 3 g salt
- 250 g granulated sugar
- 1 zest of lemons
- 200 g unsalted butter, softened
- 4 large eggs ((about 200 g without shells))
- 200 g sour cream
- 60 g fresh lemon juice
- 5 g vanilla extract
- 250 g fresh or frozen blueberries
- 15 g flour for coating the blueberries

- 115 g unsalted butter, softened
- 300 g powdered sugar, sifted
- 30 g fresh lemon juice
- 1 lemon zest
- 5 g vanilla extract (optional)

Preheat oven to 175°C. Grease and flour a 10–12 cup Bundt pan thoroughly.

In a large bowl, rub the lemon zest into the sugar to release the oils.

Beat the butter and lemon sugar until light and fluffy, about 3–4 minutes.

Add eggs one at a time, mixing well after each addition. Mix in the sour cream, lemon juice, and vanilla.

Fold in the dry ingredients until just combined.

Toss the blueberries with flour

Gently fold in the blueberries. Spread the batter evenly into the prepared Bundt pan.

Bake for 50–60 minutes, or until a skewer inserted in the center comes out clean.

Cool in the pan for 15 minutes, then turn out onto a wire rack to cool completely.

Beat the cream cheese and butter until smooth and creamy.

Gradually add the powdered sugar and mix until combined.
